Community Nutrition Related WorkPresentation on Waimanalo Food System Hui EBT at Farmer's Market : This was a group project in my Community Nutrition class. The material I contributed is available on slides 26-39. My focus was on the proposed intervention of implementing EBT technologies at farmer's markets to satisfy current needs of Waimanalo community which we identified as a local food dessert. My section covered the steps a farmer's market would have to take to establish EBT technologies.
| Medical Nutrition Therapy Related CourseworkPresentation on Esophageal Cancer with Enteral Nutrition Case Study: This was an individual presentation on an assigned case study in Medical Nutrition Therapy I. The presentation was on an Esophageal Cancer patient receiving Enteral Nutrition covering nutritional assessment, diagnosis, goals, intervention, monitoring and evaluation.

Food Science Related WorkPresentation on High Fiber Low Fat Muffin: In experimental foods FSHN 381 we were asked to create a high fiber low fat muffin utilizing cottonseed fiber. We spent two weeks experimenting in the laboratory formulating a recipe that met the nutritional standards while maintaining favorable sensory qualities. Our final product was presented to senior citizens at 15 Craigside assisted living facility in Honolulu, HI. The senior citizens tasted samples of our muffins, and completed sensory evaluation forms following a presentation explaining our experimental process. I was lead facilitator for this experiment in charge of planning, managing and execution. Please click on the link below to view the final presentation we shared at 15 Craigside. | Nutrition Counseling Related WorkVideo of Nutrition Counseling Skills Final Exam: This is footage of my final exam for FSHN 459 Nutrition Counseling Skills. The class was assigned to prepare information for three possible dietary related conditions, and to arrange a friend or family member that has not taken the class yet to come and role play as our patient. On the day of the exam our "patient" selected the condition at random and I counseled them for 20-25 minutes. My "patient" was an elderly person with sarcopenia who has poor appetite and difficulty chewing. Enjoy the show! |
